Baked Potato (Loaded BBQ Baked Potato)

Cook Time:

45 - 55 minutes

Ingredients

__Potatoes, 2-3 whole

__Vegetables of your choice (onions, bell peppers, cauliflower & kale in photo)

__Raw Greens of your choice (spinach and arugula in photo)

__Tofu, 1 16oz pack

__Water, 3 cups

__Miso paste, 1 spoonful

__Cornstarch or Arrowroot powder, 4 spoonfuls

__Garlic granules light layer

__Paprika, light layer

__Oregano, light layer

__Black Pepper, light layer

__BBQ sauce of your choice, light layer


Plantiful Add-ins

__Avocado, sliced

__Whole grains of your choice (quinoa, millet, buckwheat, rice, etc)

__Nuts of your choice (almonds, walnuts, peacans, etc)

__Seeds of your choice (hemp seeds, ground flaxseeds, chia seeds, pumpkin seeds, etc)

Label

Measurement Key:

Spoonful = 1 teaspoon (tsp)

Light layer = 1/2 - 1 tablespoon (tbsp)

Medium layer = 1.5 - 2 tablespoons (tbsp)

Heavy layer = 3 - 4 tablespoons (tbsp)

How To

Step 1
Preheat oven to 425 degrees fahrenheit

Step 2
Wash potatoes, remove spuds and pat dry with a towel

Step 3
Lay potatoes on sheet pan lined with parchment paper

Step 4
Carefully stab each potato all over with a fork a few times (depending on size of potato, you can average about 7-8 stabs per potato) 

Step 5 (OPTIONAL)
Put a nickel sized amount of oil on to hands and rub a very thin layer all over each potato.

Step 6
Bake on middle rack for 40-50 minutes. (you may hear them sizzling/squeeling at some point, thats okay)


Step 7

Chop and saute or roast mixed veggies of your choice with herbs and spices


Step 8

Follow my Crispy Tofu Recipe if you want some of that on your potato. 

To lessen your load, you can also just add the small chopped or crumbled tofu to the mixed veggies.

Step 9
Remove from oven and check to make sure they are done by carefully piercing the top with a fork. If its soft inside once you get past the skin, then its done! If you struggle to get your fork to slide through, let them cook for a few more minutes.

Step 10
Let sit for at least 3 minutes before carefully cutting open.


Step 11

Carefuly place potato on a bed of greens of your choice. Add your mixed veggies and tofu. Drizzle your choice of BBQ or another sauce on top!
