Soup (Plantiful White Bean Chili)

__Onion, 1/2 medium sized, chopped

__Bell Peppers, 2 medium sized, chopped

__Celery, 2 stalks, chopped

__Jalapeno, 1 medium/large, chopped small

__White beans of your choice, 2 cans, drained and rinsed

__Corn (fresh or frozen), 1/2 cup

__Garlic, 3-5 cloves, chopped small OR Garlic powder, heavy layer

__Cumin, medium layer

__Paprika, medium layer

__Nutritional Yeast, medium layer

__Salt & Pepper, light layer

Plantiful Add-ins

__Yellow Tomato, 1 large, chopped

__Carrots (white or yellow), 2 large, chopped 

__Dark Leafy Greens of your choice, chopped

__Parsnips, 2 large, chopped


Measurement Key:

Spoonful = 1 teaspoon (tsp)

Light layer = 1/2 - 1 tablespoon (tbsp)

Medium layer = 1.5 - 2 tablespoons (tbsp)

Heavy layer = 3 - 4 tablespoons (tbsp)

How To

For Stove Top:
Step 1
Add onions, bell peppers, and a few splashes of water to the bottom of the pot

Step 2
Cover and let simmer for about 3 minutes

Step 3
Add rest of ingredients

Step 4
Cover with lid and let simmer/cook for at least 30 minutes. Stir often

Step 5
Taste check & enjoy!

For Slow Cooker/ Crockpot:
Step 1
Add all ingredients to crockpot

Step 2
Carefully mix together to combine

Step 3
Set crockpot to high for at least 1 hour then reduce to low heat. 

Step 4
Stir often. The longer it cooks in there, the better it turns out.
