Soup (Loaded Butternut Squash)

Ingredients

__Butternut squash, 1 medium sized, peeled & chopped

__Carrot, 1 large, chopped small

__Celery, 2 large stalks, chopped small

__Red Onion, 1/4 of large, chopped small

__Apple, 1 chopped small

__Beans of your choice, 1 can

__Plant milk of your choice, about 1 cup

__Rosemary, 3 stems or medium layer, remove leaves from stem

__Basil, 5-10 leaves, ripped or chopped

__Garlic, 4-6 cloves, chopped small

__Garllic powder or granules, light layer

__Oregano, light layer

__Black Pepper, light layer

__Salt, light layer



Optional Add-ins/ Toppings

__Greens of your choice, 1-2 handfuls, chopped or ripped

__Fresh Parsley, a pinch or two

__Pumpkin Seeds, 1 handful

__Hemp Seeds, 1 handful

__Avocado or Olive Oil, 2 spoonfuls

Measurement Key:

Spoonful = 1 teaspoon (tsp)

Light layer = 1/2 - 1 tablespoon (tbsp)

Medium layer = 1.5 - 2 tablespoons (tbsp)

Heavy layer = 3 - 4 tablespoons (tbsp)

How To

Step 1

Preheat oven to 400 degrees fahrenheit. 


Step 2

Line either baking sheet or pan with parchment paper. Add butternut squash (and all other vegetables if you just want to roast them all instead of cooking the rest on the stove. Up to you, I typically just roast the squash).


Step 3

Add rosemary, basil and garlic to baking sheet & veg. Put in oven for at least 20 minutes or until soft


Step 4

If you chose not to roast all of your vegetables, you can add the rest to a large pan on medium heat with a few splashes of water and the rest of the spices except the salt. Add beans after a few minutes and cook for about 20 minutes or until soft. Keep adding water as necessary so nothing dries out.


Step 5

Once all veggies are soft (including whats in the oven) add them to your blender. Add beans (if you didn't add them already) and plant milk. Blend until smooth or almost smooth depending on how you like it


Step 6

Pour blended mixture into pan/pot on medium low heat. Let it bubble together while stirring often for at least 5 minutes. Add more plant milk or water if it seems like its getting too think. 


Step 7

Add salt, taste check & enjoy with toppings of your choice
