
Ingredients

__Onion, 1/4 - 1/2 medium sized, chopped small
__Bell Peppers, 2 medium sized, chopped small
__Tomatoes, 2 or 3 medium sized, chopped small
__Carrot, 1 medium/large sized, chopped small
__Lentils of your choice, 1 cup
__Beans of your choice, 1 can, drained and rinsed
__Garlic, 2 or 3 cloves, chopped small
__Jalapeno or Seranno Pepper, 1 chopped small (take your spice tollerance into consideration here!)
__Frozen corn, 1 cup
__Dark Leafy Green of your choice, 1-2 large handful(s), chopped small
__Water or Vegetable Broth
__Tomato Paste, 1 spoonful or 1 cube
__Tomato Sauce, 3 spoonfuls or 3 cubes
__Cumin, medium layer
__Chili Powder, medium layer
__Garlic Powder, medium layer
__Paprika, light layer
__Onion Powder, light layer
__Salt & Pepper, light layer
__Toasted Tortilla Strips or Tortilla Chips, 1 handful
__Avocado, 1/2 - 1 per bowl
Optional Add-ins
__Any Other Vegetable that you have, chopped small
__Brown Rice or Other Whole Grain of your choice, 1.5 cups
__Smoked Chipotle, light layer
__Hickory Smoked Salt, light layer or Liquid Smoke, 1 spoonful

Measurement Key:
Spoonful = 1 teaspoon (tsp)
Light layer = 1/2 - 1 tablespoon (tbsp)
Medium layer = 1.5 - 2 tablespoons (tbsp)
Heavy layer = 3 - 4 tablespoons (tbsp)
How To
For stove top:
Step 1
Add onions, bell peppers and carrots + a few splashes of broth or water to the bottom of the pot
Step 2
Cover and let simmer for about 3 minutes
Step 3
Add rest of ingredients excpet tortilla strips or chips and avocado
Step 4
Cover with lid and let simmer/cook for at least 30 minutes. Stir often
Step 5
Taste check & enjoy! Serve with Avocado and Tortilla Strips on top
For crockpot:
Step 1
Add all ingredients to crockpot
Step 2
Carefully mix together to combine
Step 3
Set crockpot to high for at least 1 hour then reduce to low heat. Soup should be ready within 2-3 hours but can slow cook as long as you want on low.

Taste Check & Enjoy! Serve with Avocado and Tortilla Strips on top
