Potatoes (Hummus Glazed Potatoes)

__Potatoes, 2 - 4, chopped OR Mini potatoes, about 25

__Hummus of your choice, 2 heaping spoonfuls

__Soy sauce or liquid aminos, 3-5 spoonfuls

__Garlic powder, medium layer

__Paprika or smoked paprika, medium layer


Measurement Key:

Spoonful = 1 teaspoon (tsp)

Light layer = 1/2 - 1 tablespoon (tbsp)

Medium layer = 1.5 - 2 tablespoons (tbsp)

Heavy layer = 3 - 4 tablespoons (tbsp)

How To

Step 1

Preheat oven to 400 degrees Fahrenheit

Step 2

Wash and chop potatoes to the size of your choice

Step 3

Combine the rest of the ingredients in a bowl and set to the side

Step 4

Put potatoes in a small/medium sized roasting pan (preferrably one with sides to help lock in moisture)

Step 5

Pour mixture over potatoes, mix around with a spoon in not poured evenly over all of them

Step 6

Roast potatoes for about 30 minutes

Step 7

Remove from oven & let cool for at least 3 mins. Smash with a fork if you want

Step 8

Add a little salt, taste check & enjoy!
