Creamy "Marry Me" Tuscan Sauce (vegan)

Ingredients

__Small Tomatoes, enough to fill be bottom of your smallest deep dish (think bread pan)

__Garlic, 4-8 cloves, peeled and smashed

__Onion, 1/4 of medium sized, chopped small

__Bell Pepper, 1/2 of a medium sized, chopped small

__Dark Leafy Green of your choice, 1 handful, chopped

__Chickpeas/ Garbanzo Beans, 1 16oz can, drained and rinsed

__Basil (I prefer fresh), about 8 leaves

__Oil of your choice (I use avocado oil), 2-3 spoonfuls or enough to cover the bottom of the pan

__Crushed Red Pepper, light layer

__Garlic powder/granules, light layer x2

__Thyme, light layer

__Oregano, light layer

__Nutritional yeast, light layer

__Black Pepper, light layer

__Salt, light layer at the end

__Plant milk of your choice (I prefer soy for this recipe), 2 cups

__Flour of your choice, 1 spoonful

__Cornstarch, 1 spoonful

__Water, as much as you need to thin it out 



Plantiful Add-ins:

__Carrots, 1/2 of medium sized, chopped small

__Aspsaragus, 8-10 stems, chopped small

__Broccoli stems, chopped small

__Pasta or grains of your choice, about 1.5-2 cups, cooked

Label

Measurement Key:

Spoonful = 1 teaspoon (tsp)

Light layer = 1/2 - 1 tablespoon (tbsp)

Medium layer = 1.5 - 2 tablespoons (tbsp)

Heavy layer = 3 - 4 tablespoons (tbsp)

How To

Step 1

Preheat your oven to 375 degrees fahrenheit


Step 2

Drizzle a the small amount of oil onto the bottom your small, deep pan. Add tomatoes, garlic and basil.


Step 3

Put that in oven for about 20 minutes or until tomatoes are wilted and/or dark on top 


Step 4

While the tomatoes are roasting, chopp and add all other veggies and spices except for the greens and beans to a pan on medium heat


Step 5

After about 10 minutes, add your beans and greens


Step 6

By now, your tomatoes should be slightly blubbling up and darkening in the pan. Remove from oven and pour everything onto what you have cooking in your pan. Stirring well yet gently, let cook together for 3-5 minutes


Step 7

Add the flour, cornstarch and plant milk. Stir well & let cook for another 5 minutes. Stir often and add water if the sauce needs to be thinner


Step 8

Remove from heat and enjoy as a dip with. toasted bread

OR Add your pasta or rice to the sauce & enjoy
