Cowboy Caviar (WFPB)

Ingredients

__Onion of your choice, 1/4 medium size, chopped small

__Bell Peppers, 1-2 large size, chopped small

__Beans of your choice, 1-3 cans

__Grape tomatoes, 1 handful, chopped small

__Greens of your choice (Kale, Cabbage, Dandelion Greens, etc), chopped small

__Avocado, 1 medium size, chopped small


For Dressing (remember, just use what you have):

__Red wine vinegar, 1/4 cup

__Balsamic Vinegar, 1 spoonful

__(Optional) Olive oil, 1 spoonful

__Water, 1/4 cup

__Lime juice, 1/2 of a lime squeezed

__(Optional) Cilantro, 1 small handful fresh, chopped small

__Cumin, medium/heavy layer

__Garlic, medium later

__Nutritional Yeast, medium layer

__(Optional) Chipotle, light layer

__(Optional) Smoked Salt, light layer

__Black pepper, light latyer

__Salt, light layer

Label

Measurement Key:

Spoonful = 1 teaspoon (tsp)

Light layer = 1/2 - 1 tablespoon (tbsp)

Medium layer = 1.5 - 2 tablespoons (tbsp)

Heavy layer = 3 - 4 tablespoons (tbsp)

How To

Step 1

Prepare and chop all raw vegetables. Add to large bowl with the beans.

(Option here to microwave beans separately for 30 seconds but not necessary)


Step 2

Add all dressing ingredients to a separate bowl. Stir well


Step 3

Pour dressing onto veggies and beans. Toss/combine well


Step 4

Taste check & enjoy! 

Great as a salad/dip, in a sandwich or pita, on a salad, on toast, and more!
