__Ripe Bananas, 2-3, mashed
__Pumpkin puree, 1/2 cup
__Date Sugar, 2/3 cup
__Flour, 2 cups
__Baking soda, 1 spoonful (teaspoon)
__Salt, 1/2 spoonful
__Vanilla powder, 1 spoonful
__Cinnamon, 1 spoonful
__Dairy-Free butter, 1/3 cup, melted
__Plant milk of your choice, 1/4 cup
__Pumpkin seeds, 1 handful
Plantiful Add-ins
__Walnuts, 3/4 cup, chopped
__Almonds, 3/4 cup, chopped
__Dark chocolate chips, 3/4 cup

Measurement Key:
Spoonful = 1 teaspoon (tsp)
Light layer = 1/2 - 1 tablespoon (tbsp)
Medium layer = 1.5 - 2 tablespoons (tbsp)
Heavy layer = 3 - 4 tablespoons (tbsp)
How To
Step 1
Preheat oven to 350 degrees fahrenheit
Step 2
Mash Bananas in a large mixing bowl
Step 3
Add the pumpkin puree, date sugar, cinnamon and vanilla powder to the bowl. Mix well with fork or wisk.
Step 4
Melt vegan butter. Add melted butter, flour, salt, and plant milk. Mix with spatula gently until fully combined, but don't over stir)
Step 5
Line a 8 1/2 x 4 1/2 inches or 9 x 5 inches bread pan with parchment paper
Step 6
Carefully pour mixture into lined pan. Sprinkle pumpkin seeds on top
Step 7
Bake for 50-55 minutes or until fork/toothpick inserted comes out clean.
Step 8
Remove from oven & let cool for at least 20-30 minutes before slicing and enjoying!
