Plantiful Oat Muffins

Bananas, 2, mashed

Dates, 3, chopped small

Cinnamon, medium layer

Vanilla powder or Vanilla extract, a dash

Ground Flaxseed, 2 heaping spoonfuls

Hemp seeds, 2 spoonfuls

Chia seeds, 2 spoonfuls

Baking Soda, 1 teaspoon

Date syrup, maple syrup, or honey, 1 spoonful

Oats, 2 cups

Water, 2 cups

Optional Add-ins (either on top or inside)

Peanut Butter, 1 heaping spoonful

Strawberries, chopped

Blueberries, handful

Blackberries, handful, chopped

Walnuts, handful, chopped

Sunflower seeds, handful

Pumpkin seeds, handful

Fun Fact

These are dog friendly as long as you keep the walnuts out of it :)

I give Lemon a chopped banana, chopped muffin, blueberries and a little peanut butter drizzled on top for breakfast! She loves it!


Measurement Key:

Spoonful = 1 teaspoon (tsp)

Light layer = 1/2 - 1 tablespoon (tbsp)

Medium layer = 1.5 - 2 tablespoons (tbsp)

Heavy layer = 3 - 4 tablespoons (tbsp)

How To

Step 1

Preheat the oven to 350 degrees fahrenheit

Step 2

Combine all ingredients except oats and water in a large mixing bowl. Stir well with fork

Step 3

Add Oats and water to mixing bowl. Stir well with spoon

Step 4

Using a cupcake or muffin tin, scoop out 2 spoonfuls into each cup

Step 5

Decorate top with seeds of your choice (if you want)

Step 6

Bake for 25 minutes

Step 7

Let cool for 3-5 minutes.

Step 8

Top with your favorite fruits, seeds and anything else that sounds good to you! Enjoy!
