Soup (Plantiful Tomato Basil)

Ingredients

__Tomatoes, 2-3 large, chopped large

__Onions, 1/2 medium, chopped large

__Garlic, 4-6 cloves, smashed

__Plant milk of choice, 1/4 cup

__Basil, fresh or ground, about 12 leaves, chopped small or heavy layer

__Garlic powder, medium layer

__Nutritional Yeast, light layer

__Pepper, light layer

__Salt, to taste


Optional Plantiful Add-ins:

__Carrots, 1-2 large, chopped to medium size

__Dark Leafy Greens of your choice, 1 handful

__Orange, Red, or Orange bell peppers, chopped medium size

__Green onion, chopped small, put on top

Measurement Key:

Spoonful = 1 teaspoon (tsp)

Light layer = 1/2 - 1 tablespoon (tbsp)

Medium layer = 1.5 - 2 tablespoons (tbsp)

Heavy layer = 3 - 4 tablespoons (tbsp)

How To

Step 1

Preheat oven to 400 degrees fahrenheit


Step 2

Add largely chopped vegetables to a baking pan (preferably with a rim)


Step 3

Add spices except for fresh basil


Step 4

Roast in the oven for 25-30 minutes


Step 5

Remove from oven and carefully add roasted veggies to blender (or place in a bowl and prepare to use immersion blender)


Step 8

Add plant milk of your choice and blend until smooth


Step 9

Carefully pour contents into another bowl or container. Taste check & Enjoy!


Step 10

Taste check & Enjoy! Goes deliciously well with pan toasted bread (similar to grilled cheese without the cheese)


Note: Leftovers last for about a week and taste even more flavorful!
