
Ingredients

__Potatoes, 3 whole
__Hummus of your choice
__Garlic and/or Garlic Powder, 2-3 cloves or heavy layer
__Smoked Paprika
__Salt to taste at end
Optional Add ins:
__Cabbage or Red Cabbage, chopped finely
__Green onions, chopped

Measurement Key:
Spoonful = 1 teaspoon (tsp)
Light layer = 1/2 - 1 tablespoon (tbsp)
Medium layer = 1.5 - 2 tablespoons (tbsp)
Heavy layer = 3 - 4 tablespoons (tbsp)
How To
Step 1
Preheat oven to 400 degrees Fahrenheit
Step 2
Wash potatoes and get them ready to bake
Step 3
Carefully and lightly stab each potato a few times with a fork
Step 4
Optional: Put a little drop of oil in your hands and very lightly cover them in oil
Step 5
Bake the potatoes for about 1 hour
Step 6
After 1 hour, remove the potatoes from the oven and let cool for at least 5-10 minutes
Step 7
Turn up the oven heat to 425 degrees Fahrenheit
Step 8
Carefully cut potatoes in half (the long way) using a fork to hold potato in place
Step 9
Combine the rest of the ingredients in a mixing bowl except for green onions (if using them). Stir
Step 10
Using a spoon, gently scoop out the middle of each potato leaving a ring of potato along the skin. (Think: potato cups) Add to seasoned hummus. Stir
Step 11
Once potatoes and hummus are fully combined, spoon the mixture back into each potato cup
Step 12
Put back into the oven for another 15 minutes or until the top gets a little toasty brown
Step 13
Remove from oven, let cool & enjoy!
