Plantiful Oat Muffins

__Bananas, 2, mashed

__Dates, 3, chopped small

__Cinnamon, medium layer

__Vanilla powder or Vanilla extract, a dash

__Ground Flaxseed, 2 heaping spoonfuls

__Hemp seeds, 2 spoonfuls

__Chia seeds, 2 spoonfuls

__Baking Soda, 1 teaspoon

__Date syrup, maple syrup, or honey, 1 spoonful

__Oats, 2 cups

__Water, 2 cups

Plantiful Add-ins: (either on top or inside)

__Peanut Butter, 1 heaping spoonful

__Strawberries, chopped

__Blueberries, handful

__Blackberries, handful, chopped

__Walnuts, handful, chopped

__Sunflower seeds, handful

__Pumpkin seeds, handful

Fun Fact

These are dog friendly as long as you keep the walnuts out of it :)

I give Lemon a chopped banana, chopped muffin(s), blueberries and a little peanut butter drizzled on top for breakfast! She loves it!


Measurement Key:

Spoonful = 1 teaspoon (tsp)

Light layer = 1/2 - 1 tablespoon (tbsp)

Medium layer = 1.5 - 2 tablespoons (tbsp)

Heavy layer = 3 - 4 tablespoons (tbsp)

How To

Step 1

Preheat the oven to 350 degrees fahrenheit

Step 2

Combine all ingredients except oats and water in a large mixing bowl. Stir well with fork

Step 3

Add Oats and water to mixing bowl. Stir well with spoon

Step 4

Using a cupcake or muffin tin, scoop out 2 spoonfuls into each cup

Step 5

Decorate top with seeds of your choice (if you want)

Step 6

Bake for 25 minutes

Step 7

Let cool for 3-5 minutes.

Step 8

Top with your favorite fruits, seeds and anything else that sounds good to you! Enjoy!
